　　普洱茶的生茶和熟茶在制作的过程中工艺不同，表现在区别的表象上：生茶和熟茶的外形不同，当然功效也不同。为大家整理了普洱茶的生茶和熟茶的区别，欢迎大家的阅读。 　　 一,生茶： 　　新鲜的茶叶采摘杀青后制成毛料，毛料经过筛选分出等级，然后高温蒸压，制成各种形状，以自然的方式陈放，未经过渥堆发酵处理为生茶。生茶茶性较烈，刺激，新制或陈放不久的生茶有强烈的苦味，涩味，汤色较浅或黄绿，且茶性较寒，烈，容易伤胃。不适宜马上喝，尤其是胃不太好的茶友。 　　生茶自然转熟的进程相当缓慢，视保存环境条件，至少需要近十年，时间越长，茶体内的多酚类化合物的酶性和非酶性氧化越完全，其陈香益发醇和稳健，但韵致活泼生动，这种活力即为茶人所称道的“茶气”。生茶适合喜欢原生态，崇尚自然的人士长久储藏，可以陈放在家中，年复一年看着生普洱叶子颜色的渐渐变深，香味越来越醇，就象人生履历的累计，有着说不尽的乐趣和兴奋。当然普洱的价值也将随之年年上升。 　　 二,熟茶： 　　普洱茶在制作过程中，在经过杀青，筛选后，然后经过人工渥堆发酵使茶性趋向温和，作用以人工方式速成发酵，促进多酚类化合物非酶性自动氧化，转化茶叶内含物质，减除苦涩味，使滋味变醇，消除青臭气，缩短其陈化阶段，可提早饮用。这称谓熟茶。 　　熟茶具有温和的茶性，茶水丝滑柔顺，醇香浓郁，更适合日常饮用。同生茶一样，熟茶的香味也仍会随着陈化的时间而变得越来越柔顺，浓郁。这是1973年发展出的技术，云南省微生物研究所对“渥堆”的相关研究，在1985年还获得云南省科技进步三等奖。这里要说明的是，有的人对“渥堆”有所误解，还把“渥堆”和“湿仓”划上等号，事实是两者是完全不同的。“湿仓”是指投机者将年份比较新的普洱茶成品，陈置于湿度较高的环境，利用高湿度(或泼水)促使茶品发霉，以改变茶体，使外观上可伪充陈年茶，这种不健康的湿仓茶，是经不起高温冲泡下的品鉴考验的，经验丰富的茶友能喝出其中的仓味，水味，有些甚至还会有严重的霉变的味道。 　 　三、区分方法： 　　时间不长的生茶和熟茶很好区别，从外观颜色上就能分辨：生茶颜色青绿，而熟茶暗红或栗红，栗黑色。 　　生茶： 　　新鲜的茶叶采摘后以自然的方式陈放，未经过渥堆发酵处理为生茶。生茶茶性较列，刺激，新制或陈放不久的生茶有强烈的茶味，涩味，汤色较浅或黄绿。 　　熟茶： 　　普洱茶在制作过程中经过渥堆发酵使茶性趋向温和，称谓熟茶。1973年勐海茶厂与昆明茶厂联合研制渥堆发酵法成功之后，当年昆明茶厂生产的茶砖因其茶汤金黄润泽，参枣味浓郁，被受普洱茶人推崇。熟普具有温和的茶性，茶水丝滑柔顺，醇香浓郁，更适合日常饮用。 　　普洱茶生熟的主要区别就是熟饼经过卧堆，并适度发酵，可以直接饮用，茶饼呈现深黑色，汤色呈红褐色、汤色较红亮。 　　青饼，也可以俗称生饼，是比较传统的加工工艺，当年的茶叶直接压制成饼，不经过人工发酵，靠时间和岁月的流逝，自然发酵，一般5到10年的茶才好喝。汤色呈金黄色，比较透亮，生饼霸气十足，起到刮油的功效，不建议餐前饮用。 　　四，时间比较长的生茶和熟茶则比较难区别： 　　1.外观;陈年的生茶红中带绿，陈年的熟茶，颜色红中带黑，且总体上来说颜色比前者要深。 　　2.香气;陈年的生茶(干仓)有一股较浓的陈香味，而陈年的熟茶则分枣香，参香、樟香、荷香等其它香味，且香味较淡。 　　3.叶底。陈年的生茶叶底油亮，黑中带绿，条索比较清晰;陈年的熟茶叶底红亮，黑中带红，条索比较模糊。 　 　五，延伸知识 　　回答“普洱茶属于发酵， 　　一、 普洱茶茶性温和，不伤胃。现代人紧张、压力大的生活模式，胃疾普遍，气血偏虚，食不正常，一般轻发酵茶对爱茶之人而言，确有“不可承受之轻”的顾忌。 　　二、 普洱茶是有科学根据的保健饮料。现代人“以命博钱”者，比比皆是，普洱茶的防癌保健功能一经医界证实后，“以小钱保长命”的观念，不但强化了爱茶人的信念，同时吸纳了许多新进茶友。此外，普洱茶去脂消食，减肥瘦身的药理特性，更是风靡了无数爱美塑身族、中年发福者的心。 　　三、 普洱茶易冲耐泡，操作平易随和。陈化得宜的普洱茶，不苦不涩，即使久浸亦能入喉，既不需像高山茶分钞必较，却乃有茶事的乐趣，甚至不失茶包便利性。 　　四、 普洱茶保存容易，茶性转换富变化。从某个定义来说，普洱茶是“活的有机体”，其主要特点在于茶体完成后，所持续进行的“后发酵作用”(或称后熟作用、陈化作用)，随着时间的延长，它的风味转换越趋稳定内敛，不同陈期的茶体所拥有的风味皆不尽相同，这也是品茶茗，藏茶者某种程度地参与了“茶叶的制作与完成”，其实，一饼普洱茶的最终完成可能长达数十、近百年之久，因为打从茶叶离树起，直到热水冲入壶中，它都在处于“现代进行式”，无时无刻不在转化进程中。 　　五、 普洱茶是“可以喝的古董”。很少有饮料或食品具备普洱茶这种“可饮、可藏”的双重特性，“人人皆可饮，越旧价越高”，新普洱茶是人人可得的日常饮料，老普洱茶却又“价等兼金”，可望不可及，如果在“普洱天平”的左端是“典藏价值”，是只涨不跌的“耐久财”;而右端则是“饮用价值”，是喝一片少一片的“消费财”，那“时间”就是游走在两者之间的“砝码”，随着时间砝码往左推移，这饼茶的典藏价值就越高，反之亦然，远年普洱茶所具备的典藏性类似红酒，两者一样讲究年份、出身(酒庄、茶庄)，注重稀有性与保存状况。
